


Students of the National Diploma (ND1) Hospitality Management Technology programme at the International Institute of Tourism and Hospitality (IITH), Yenagoa, have showcased their culinary competence during the First Semester Food Practical Examination, demonstrating practical skills in food preparation, presentation, and service through a structured three-course menu.
The practical examination, held at the Institute's training kitchen, formed part of the institution's competency-based assessment designed to evaluate students' readiness for careers in the hospitality and tourism industry. Throughout the exercise, students were assessed on menu planning, food preparation techniques, plating aesthetics, hygiene standards, teamwork, time management, and professional service delivery.
The students presented a carefully planned menu that reflected both Nigerian and international culinary traditions. The first course featured fresh fish pepper soup and goat meat pepper soup, highlighting the students' understanding of traditional Nigerian cooking techniques and the use of indigenous spices and flavours. For the main course, the students prepared braised rice served with chicken curry sauce, coconut rice, and Chinese fried rice accompanied by chicken fajita sauce, demonstrating their exposure to continental cuisine and contemporary fusion cooking. The practical concluded with a dessert course comprising milky puff-puff served with pink lady drink, alongside freshly baked cupcakes paired with chapman, showcasing both pastry preparation and beverage service.
Lecturers and invited assessors commended the students for the quality of their meals, creativity, presentation, and professionalism throughout the examination. The practical exercise reflected the students' growing confidence in applying theoretical knowledge to real-life hospitality operations while maintaining the standards expected in professional kitchens.
The examination further highlights the International Institute of Tourism and Hospitality's commitment to providing practical, industry-focused education that prepares students for successful careers in hospitality, tourism, catering, and related sectors.
